Different four layer stackup

Am I correct that stackups with smaller separation between signal and ground layers are better for thinner/higher density signal traces?

What's the disadvantage of say JLC04161H-1080 with a layer separation of 0.076mm vs default JLC04161H-7628 with a layer separation of 0.21mm (other than it not being available for economic assembly)?
