Disk usage spikes randomly

So, I've had an odd issue since December of last year where in Task Manager it'll say System and other tasks are taking up random amounts of disk space while only displaying 0.8 mbs of usage. Then the problem would randomly disappear then a couple weeks go by and now it's back. I'll have discord and 1 browser tab open and it's using 20% then it'll spike to 50-60% all while using barely any mbs of space, then it'll go back down to 0-5%. But when I play most games my disk usage is now higher while playing any game, it usually fluxuate between 30-70% and for example I could play a game like Zenless Zone Zero with Youtube up and Discord and my disk would barely jump above 5%. I just installed CrystalDiskInfo and my temp is fine and my SSD health is at 91%, I've also disabled sysmain but didn't notice a difference at all. I'm kind of lost on wtf the problem could be. Maybe it could be my 3rd party AntiVirus (AVG) but that also is also at 0.1% of disk usage. Most of my games still run somewhat fine, just a bit laggy in menus and random skip here and there, my friends voices tend to cut out due to the increased disk usage which is really annoying. Lastly, I did a full chkdsk last night that took 8 fkn hours and it did nothing. (My Specs: Patriot M.2 P300 2TB SSD, 32GBs of ram, AMD 7 7800X3D, and a 4070 Super) Any thoughts or ideas are appreciated and thanks for reading this far if you have :)
