how to counter infantry spam in castle when playing cav civ?

im 1300-1400 elo, and rn ive been maining georgians and i do great with them ≈60% win rate, the thing its that most of the games i lose or are close calls are against very spammable infantry civs in castle, japanese pikes+longsword ramhopping, bulgarians krepost rushing with longswords and pikes, i know that my best bet in those cases are to try to wall, rush imp with the market and get chemistry quick and switch to hc, but its sometimes hard since opponents will try and deny my resources and force fights in castle when im doing knights+skirms and they will get the upperhand in total resources, so whats the strategy here to help me either clean most units in castle or defend to rush chemistry and hc?
