Budget questions for 2 people for 3 weeks

Our flights are paid through points. After accommodations, we currently have about 4,000 £ for everything else. We are not frugal people and like going out for dinner at nice places a few times and generally be a little loose with money when we travel. I know we are super fortunate.

Since the pound is worth way more than the Canadian dollar I’m having a hard time figuring out how much more we should save before going in May.

We will be in London 5 nights, Bath and York for 2 and 3, Edinburgh for 4 and northern highlands for 4 if that makes a difference.
