How much to carry?

I'll be travelling Vietnam for 2 weeks and I have been researching Moreta Pay. I realise that everything is super cheap and I don't want to carry hundreds of GBP on me all the time so does anyone have any recommendations for how to carry at a time / how much I should deposit into Moreta?
