Need E-Sim advice & recs for traveling to France & UK

Hi, I have only used an e-sim once a couple years ago for a month-long trip and although it was annoying to set up, it worked and was 1/3 of the price of asking my mobile plan for international data.

We are flying into Paris and staying there for a week and then spending the next week in London and then Edinburgh. I was wondering if anyone has used e-sims and if there’s one that 1. works in both UK & France because I really do not want to have to go through the convoluted set up twice lol and 2. works with verizon carrier.

Any recs or info is appreciated! Thank you!
