Questions about age and documentation

For context, my finance and I have been dating for 4 years and recently got engaged. I was brought by my parents on a B-2 visa which we overstayed. I have been in this country half of my life, and I am graduating from college very soon. My fiancé and I decided to take the next step this young mainly because we are very religious and we don’t believe in moving out without being married. We want to build a family, and being able to use my degree and find a good job would make that dream come true easily, so we started contemplating the idea of applying for a change of status soon after the wedding. We have many uncertainties, and I would like to hear your opinions on this. Could being a young couple affect our application ? (23 yo). What documentation should we start collecting? Should we wait more time before applying? What are some things we can do to reduce risk of rejection? Please help, I would like to read your experiences.
