Poco a Poco -- Ridiculoulsy small batches in a slow NH year

I know this will sound ridiculous for you big operations. I tap just seven trees in NH White Mountains. I bought an commercial size induction hot plate to accompany our solar array. It's just the right size to boil away five gallons at time to yield just over a pint of syrup, so far I have produced a half gallon, mostly from my own trees, but also scored from friends who find their small sap yields isn't worth working with. In Spanish they have an expression Poco a Poco, little by little. My motto.
