Making a cherry music box - overwhelmed by finishes. What is appropriate to use here?

I wanted to surprise my wife with a custom made music box for her birthday. However while I've got everything planned out for design/assembly/cutting/hardware... what I don't know is how I should finish it.

I see 1000 articles online and half them seem to give contradicting information. I've got spray polyurethane and picked up shellac at the recommendation of the guy at woodcraft... but I see online a lot of people recommending to stick with de-waxed shellac which it doesn't seem like this can is?

I'm pretty damn new at this - what should I finish this with? I don't expect it to see heavy use but I do want it to last.
