Mechanical engineering job help

Hello, I am a 20yr F and I’m in my second year of my mechanical engineering degree. If I stay on track I should be able to graduate in 2 years with my bachelor’s. I’ve been in school 3 years now because I transferred schools and changed my major from mechanical engineering technology to mechanical engineering. Unfortunately most of the engineering classes I took did not transfer other than my gen eds and calculus. So my main focus is finishing school as fast as possible, im on pace to finish at 23 and stay on track with my peers. But I know how important internships are and building a resume. So far I have worked at 1 internship over the summer where I gained a lot of experience with cables and wiring panels. I have multiple at home projects I want to start and I have 2 school projects that I have completed one being an rc car and the other a hydroplane. Im going to take summer classes this year instead of doing an internship. My question is should I go to college for an extra semester and get an internship next summer. Or do summer school for the next two summers and then try to find a job after? If I wait till after I will only have 1 internship and hopefully a lot of at home projects under my belt. But if I do an internship I will have to go to school for an extra semester or two and have maybe 9 months of experience. Which choice is better, and would a starting position for a mechanical engineering job be hard to get with either decision?
