Safe USB C keystone jack that allows video

Looking for Device

Our conference room at my work has a VGA port for laptops to plug into. This is of course very outdated, so I was looking to replace it with a USB C keystone jack so people can plug in their laptops to charge and display data/video to the conference room TV. The keystone jack would then connect to a long optical cable that would go to a docking station, then the docking station would connect to a KVM.

Would this be something that is possible? My biggest worry is the keystone jack, as extenders of any kind are not in spec with usb c. This is the keystone that I was looking at. Has anyone had experience with this brand?

A different option that I thought of is getting a docking station and mounting that somewhere that anyone could use. The problem is that most docking stations either have the host port on the back, which would make the usb and hdmi cables point outwards, or they are too big to fit.
