Things to do in April beginning of April? Weather Questions?

Hello!~ My boyfriend and I will be visiting first week of April for my birthday. We are from Texas and looking for a change of scenery for a few days. What are some fun things to do around that time? We are big on food so any cool food spot recommendations are appreciated! Also need to know if we will need to bring our big coats assuming it'll be cold and possibly snowy. Thanks yall! :)
