How do we know IC is giving us all the tips?

I am not here to say one way or the other if Instacart is taking tips. But was just curious how we know that they are honestly divulging how much we are tipped.

Is there anyway to verify it? And please spare me the “trust a large corporation they would never do anything nefarious.” Because they’ve already been shown to steal tips in the past.
