How to get an e-sim for travel?

If I am from the USA and I want to travel to Germany, how would getting an esim for service in Germany work. My data plan includes texting in many countries, but I don’t get service. I understand its not a physical sim but im just curious about how it works alongside my current us issued phone number and the data and apps i already have on my phone.
