How do i know about Mutation and Endangered Species

For example, on the first map, how can i know if i got all the Mutation possibles and all the endangered?

Also when going to a new map, i can see which monsties can mutate there? Rathian the game thrown on your face, but the next ones will be the same?

I was looking for those infos ingame, because i'm trying to play without looking anything on the internet... So i wanted to know if ingame i can answer some of those questions
