Applying to serving jobs- how to manage availability expectations

General

So for the past week I’ve been going on interviews at different restaurants in my city for a server position. By Monday I’ll have gone on 6 total. Today at an interview for a diner, I said I would come to an orientation on Tuesday. I still have two more interviews at restaurants I am more interested in on Monday. I want to make sure I pick the best fit for me and don’t want to commit to the first offer, but as you all know restaurants typically let you know on the spot if they want to move forward. Ideally, I would be able to fit working both jobs into my schedule, but it’s difficult because I am just in the training process and don’t know my schedule to tell a potential second job my availability. I have just been saying I “have open availability but will let you know if anything changes” when interviewing. Should I be saying something differently?

Background: I have a year of serving experience

Also, I went to an interview on Monday at a ramen place that ended with the manager telling me he’d love to have me on the team and asking me when I could come that week for training and that he would email me to set up training later that day. (I never heard from him lol) so in my opinion I don’t technically have a job until training is over
