Artisan crusty bread

Ive been playing with this great bread, but would like to make smaller loaves

Im assuming just halve the first sticky mix?

Also ive got the bottom of a Dutch oven, could I put a glass tray or a metal tray on top to act as the lid?

Any suggestions, no matter how "silly" welcome 💗💗
