Another dual gpu question : working while rendering

Hello everyone

The subject of dual gpu systems has been asked many times but I would like confirmation.

If I have a dual gpu system with an old rtx 2070 and a new rtx 40xx or 50xx, can I use one for rendering while in the same time continue other work with the other one? (Eventually with another blender instance?). I do not care about speeding up rendering, just about being able to use the system while rendering.

Or will some technical problems (the cpu?) make it impossible/ inefficient?
