Need ideas for something special and memorable to do at Universal with family including a toddler

I’ve been a Universal pass holder for years and go often. My sister and I would go all the time and our mom has been once and enjoyed it. Our dad wanted to go and he was a hard guy to shop for so I’d get him Universal gift cards for holidays and his birthday. He accumulated a few over the course of a few years. We had a trip planned but unfortunately he wound up developing health issues that wound up being pancreatic cancer and he passed away before we could take our family trip with him.

My sister has since married and has a baby who is about a year old. I’ve been sitting on the gift cards that I gave to my dad which are in total worth a few hundred dollars. I’d really love to do something special and memorable with my sister and her family as well as our mom and my boyfriend.

My nephew is a little small right now but I’m hoping to do something in the next year or two with the gift cards that will be memorable and special. I’d love to hear some different ideas, I’m also open to spending a few hundred dollars out of pocket as well.
