any advice for late-night food and activities?

Planning Question

we're finalizing our wedding for August and honestly I dont know what to do about our catering. Our coordinator keeps pushing the standard food: mini wagyu sliders, truffle fries, etc. It's fine but it feels repetitive atp. We've been to 3 weddings in last year and they have done the same spread around 11pm. A friend of mine mentioned doing full Hibachi At Home setup, which could be cool to watch people taking break from the dance floor. They can watch the chef performance and enjoy the food and some sake. I think this is the best option we've found. Does anyone have better ideas or has u guys tried this service before? I'd love to hear more about your experience
