Best way to start legion?

I’m not coming from Warhammer, but from X-wing. Painting is not something I’m used to but I’d love to try. So something like the rebels or mandalorians would be super high detail or difficult to start learning to paint with. The other three factions would therefore be super easy to learn with, but on top of that, what factions would be the best to actually play as an army?
