NZ tourist trips that still have a bit of magic but don't break the bank?

I've been living in NZ for over 10 years now, I've explored, but not as much as I wish I had. Mom is coming to visit me for a month in December, so thought it was a good excuse to get out there. I live in the Waikato, happy to drive us around the NI (or catch a cheap flight to welly - I've got fam there).

I'm close to the Coromandel, so will do a beach mish or two, but mom was keen on some other adventures. Will probably do Hobbiton and Weta workshops. Perhaps Waitomo?

Looking for some other ideas. We're both pretty fit and able, so outdoor adventures are definitely on the cards.

Any ideas / help appreciated!
