Good performing sit on top/open cockpit kayak that is not a full blown surf ski?

Question/Advice -- Sea Kayaking

Seems like kayak companies are missing a segment for paddlers like myself that used to sea kayak tour on Puget Sound, San Juan’s and large lakes but that no longer fit comfortably in a traditional sea kayak, are dissatisfied with heavy sit on top plastic kayaks, lack of performance and carrying weight 50 plus lbs. Most Surfskis have too high a learning curve and lack stability without pretty advanced technic and re-entry skills. When seakayaking I primarily used Pygmy Coho that I loved and some Necky fiberglass boats. I now have a Eddyline Caribbean 14’ SOT. which is fine for calm days but not particularly inspiring when want to paddle for more than 3 miles at a time. Any boats out there that can handle a big guy 6’3” 265 lbs that isn’t a dog to paddle but isn’t a full blown surfski and weighs under 40lbs? The Carbonology Cruze and Stellar Kingfisher or Puffin seem to be closest to what might fit the bill and like the touring models with a hatch to store a bit for full day out. Any experience with these boats or recommendations that might fit what I am looking for?
