Starting from scratch again

Its been 3 years after i finished my CS degree got into it since i started writing code during my high school days and figured this might be what i want to to do. Got an internship in a small company and then joined a smaller company wrote code igniter and php code. Got into a comfort zone didnt learn or upgrade my skills. (2 yoe on paper)

Now trying to switch jobs i realize how much time i wasted and the pathetic situation in my skillset.

I thought of switching careers but then something stops me and i really just want to do swe for a living. Solving problems and mainly building things is all i want to do for a living i love it when people use the things i built.

Relearning from the basics from networking basics all the way to fast api according to where my interests go. And some front end technologies too starting from Laravel then js frameworks is this the right approach and advice on how to show employers i possess the skills even though i havent used them in my job. (Will just projects do it)

Im in the UAE market thus jobs are far and few in number. Im trying to get into a bigger company like a corporate setting but I’m confused on how i will do it without big names in my resume any tips
