Road trip ideas

Hello all, my wife and I are starting a little trip from AZ to NC. We're wondering if there are some must hit courses along the way. We'll be taking the 40 majority of the time. I know that's like 7 states and probably hundreds of courses to play. Udisc lists a ton and I could always just stick with their star recommendations but I'd appreciate hearing from you all. We're not in a real rush to get to NC so we have a decent amount of time for travel and play along the way. Skill lvl isn't a problem I'm decent enough to hang on to some sort of a round and she just loves to huk plastic and be outside. I appreciate all your advice and input.
