Different flour

Hey everyone I want to start my own sourdough journey however I’ve seens talks that using plan flour means your sourdough is still not healthy so I just thought I would ask what’s the best flour to use for my sourdough starter that’s healthy. Just to add I am diabetic so I want something that’s low sugar and organic
