From what I've seen, no other SL in the series has a change like that.

* Between P3 & P3FES, quite a few new Persona were added and 3 were moved to the Aeon Arcana (Hierophant Ananta, Tower Uriel and Sun Metatron), and Portable added a few lower leveled Personas for players to use with the earlier Lovers & Star SL in FEMC Route.
* Between P4 & P4G, there weren't any addition to the existing arcanas, but all Aeon and Jester Personas are new additions
* Between P5 & P5R, just like P3/P3FES/P3P, new Personas were added, some were moved to Faith and Councellor

In every case but this one, none of the social links' Ultimate Persona change between the rereleases. They sometimes get put at a different level, generally higher level to make space for the new Personas added to the compendium, and Byakko does get leveled up between OG & FES (By 1 level lol), but instead Yurlungur, a FES addition, takes Byakko's place as the Ultimate Persona of the Temperance Arcana, and I'm honestly surprised this is the only time this has happened. Didn't mention Reload because as a remake its compendium is structured pretty differently with lots of Arcanas being changed around and Personas with models in P5(R)/SH2/SMTV taking the place of other.

Btw I've been having lots of fun with OG P3. Not many people play it because it's the oldest/least accessible one and FES has mostly the same but more, but the game is still really enjoyable. I do wish there were more night-time activity because since maxing Academics and Mutatsu's SL in early August, evenings have either been Tartarus visits or going to sleep, but I'm enjoying the harder SL requirements which makes me see a bunch of the hangout events that have some nice characterization, and the different Persona balance is also neat, using Ananta this early has been really fun.

Bebe's SL in Persona 3 is the only SL in the series to change Ultimate Persona between the original and the rerelease
