Traveling with icebox cake
Hello!
I’m hoping to make a matzo icebox cake for a Passover celebration that is 1.5 hours away. My plan is to make it on Friday so it sits overnight to soften the crackers.
But..I just realized that I’ve never travelled with an icebox cake! Searches are all telling me to freeze it, but that doesn’t seem right. If I were to freeze it, should I make it Thursday and let it sit in the refrigerator until Friday and then freeze it from Friday till Saturday? If I don’t freeze it, will putting it in a cooler with some ice packs be enough?
Curious if anyone has done this!
For reference, here is the recipe:

It is essentially matzo, whipping cream and ganache.
Thanks in advance for the help!
