How To Properly Use Marriage Rite Out Of BOCP With Lay Person

So my Fiance and I have finally set a date (June 21st the one year anniversary of our first date)

Both him and I would like our Christian faith represented in our marriage. he is Catholic (so it's gay marriage is not condoned) I'm Episcopalian.

We are thinking of a ceremony in a park (and reception at a restaurant) so likely it will be a lay person (possibly not Episcopalian) who dose an ordination class online (WA doesn't require officers to be licensed).

we aren't looking to have communion (as the official stance of the Catholic church is that you're not to take it unless part of a Catholic mass) and like 90% of our guests would be Catholic in one form or another)

So could we use tye book of common prayer? and if so what other parts would we have to leave out other then communion?
