Leather differences

Hi Martens family, i just wanted to ask if leather used in the shoes depend on the sizes? For instances, adrian loafers smooth leather. I found bigger sizes(from UK7-) to be more glossy whereas the smaller sizes(under Uk7) to be much more matte. Any answers?
