Travelling in Europe without a sim/data

Hello! I have three week trip in Austria & Germany this spring. I have been pondering not using an eSIM (this is what I have used for previous trips). And instead relying on wifi in hostels & cafes. I will be downloading google maps to be able to use that offline. What pros & cons come to mind for you?
