What are the easiest light roast coffees to work with?

Hi, over the past year I have delved in to the world of specialty light roast coffees. I have a tried a wide variety of processes and different types of light roast coffee and while I have tasted some great cups of coffee, many of them I have really struggled with dialing in and getting nice tasting coffee from. I have also come to realize that I don't have the most sophisticated coffee palate when it comes to light roasts and I tend to just prefer a clean tasting coffee without anything to wild like funky tasting.

So I am wondering if there are any types of light roasted coffee beans that are generally easier to extract than others? For example, I have ordered a lot off Perc in the past year and while their coffees are really interesting I find some of them a little "too adventurous" for me. I have probably had the most success with Ethiopian roasts overall. So I guess I am wondering if some of the less exciting coffees are easier to work with than others? Or does it really not matter much? I appreciate any insight you might have.

Thanks!!
