Would you ever choose to eat three eggs with mayo?
Welcome to KitchenTales, where I share opinions and recipes you should ignore from the Chaos Library.
You're at a party. The host comes up to you and asks, "Would you like an egg with mayo?" You'd gag a little and say, "No!" Right?
What if she said, "How about half an egg with mayo?" Then she holds up a platter with neatly bisected ovals of hardened egg whites with yellow goo piped into the center and a sprinkling of suspicious red powder on top.
"Oh, deviled eggs! Sure!"
Deviled eggs are weird. You'd never go to a party and snack on two or three hard-boiled eggs. But cut them in half, mix in some white goo into the yellow bits and use a piping bag (or spoon if you're not fancy) to put that goo back into the hole, and people will eat half a dozen of them. Just pop, pop, popping them into their mouths like they're grapes.
Let me give you my tips and tricks for making deviled eggs that are worth popping.
Boil some eggs. Don't over boil the eggs, but no soggy goo, either. Honestly, if you have to pick, go super hard. The mayo or Miracle Whip will fix that, but there's no recovering from orange yolk.
Peel them and cut them in half lengthwise and scoop out the green/yellow yolk into a bowl.
Then smush up your hard yolks with your white goo of choice. But here's the important part. Add dry mustard. Not regular mustard, but the dry powdered stuff you bought for that recipe two years ago and then forgot about. Mix that in judiciously, it doesn't take a lot.
Then scoop it back into the egg half and eat five or six of them, completely forgetting that each mouthful is half an egg. Oh, and paprika? Come on, you know that's just to look fancy. Don't bother. Those eggs aren't for looks, they're for maximum calorie delivery with minimal effort.
Then, maybe eat some grapes. You know. For balance.
You've reached the Tale end. Look forward to another KitchenTale soon. And don't forget to visit the Chaos Library
