Mac Mini for IPTV recording

Afternoon everyone.

I have an IPTV setup using Apple TV and UHF as the app.

I'd like to add recording function to either record TV or to download content to avoid any stream buffering.

I am looking to a Mac Mini to run the UHF server.

How much grunt am I going to need for this - I am looking at a high capacity option, so 1TB ideally to store more content, but wonder how much impact the chip & RAM is going to make.

There are second hand M1, M2, M2 Pros available, and they have 8GB, 16GB or 32GB RAM. The price varies significantly depending on the combination!

I don't want to scrimp in an important area, any suggestions for the most appropriate spec to drive what I'm looking to do?
