Tired of chicken and rice - looking for high-fiber, high-protein meal prep that actually tastes good

Vegetarian

I'm trying to be better about meal prep because my weeks get chaotic and I end up grabbing whatever is easiest. My goal is high fiber and high protein so I stay full, but I get bored fast when every lunch is just chicken, rice, and broccoli.

Constraints:

- 4 to 5 lunches and maybe 2 breakfasts

- Needs to hold up for about 4 days in the fridge, or be freezer friendly

- I don't mind repeating, but want at least 2 different flavors and textures each week

- I like beans and lentils, but I'm still figuring out how to make them tasty without drowning them in cheese

- Mild spice is fine, super spicy is not

- Bonus if it's budget friendly and uses basic grocery store ingredients

What are your go-to high-fiber, high-protein preps that still taste good on day 3 or 4? Also any tips for keeping salads from getting watery would be really helpful.

What I've been rotating lately (ingredients list so mods don't yell at me):

- Overnight oats: rolled oats, chia, Greek yogurt, milk, frozen berries, cinnamon

- Turkey chili: ground turkey, canned beans, crushed tomatoes, onion, bell pepper, chili seasoning

- Sheet pan chicken: chicken thighs, sweet potatoes, broccoli, olive oil, garlic, paprika

I'd love a couple of new staples I can build around. Thanks!
