ISO Sweet plantain recipe

I was recently in CR and fell in LOVE with sweet plantain - the kind they serve with cosados at the Sodas. My favourite kind was ones that were served in the peel, and the best was from Vikingos in la Fortuna. Does anyone have a recipe for making it that way? I haven’t been able to find any online and want to make some now I’m home! Pura vida :)
