Best restaurants in Koh Samui, Thailand?

I've been to Koh Samui twice already, but I still can't decide which restaurants are the best, as I tried to visit as many of them as possible.

I'm looking for some hidden gems and restaurants that people either don't know about or they might not look that "appealing" but are actually some of the best ones in there.

So what are the best restaurants for you in Koh Samui?
