Genned a World with the Rivers and Watershed mods in 1.22.0 RC7
Played around a little here, copied a world i liked to creative mode and looked for Rapids. They are few and far, but they exist. So, for everyone wondering, this works until rivers come to vanilla. I will probably cheat a little and spawn in some rapids after doing the appropriate work of Diverting some River water tho.
