instruments

so many times in matins today i heard the words "timbrel" "harp" "flutes" "strings" "pipes" "cymbals"... and these are all throughout the psalms as well. why exactly do the eastern churches primarily use acapella? i mean trust me, i much prefer it over pianos or organs... but a flute and a harp might be cool lol
