Cash or Card?- Wise Payment

Hello. I have read a bit and have gathered that Apple Pay is generally accepted. I will be in Barcelona, Valencia and Seville. How much cash should I carry? Additionally I will be using my Wise account. Is that a good idea? Its my first time travelling in Europe hence the confusion. Thanks :)
