Gifting Discovery flight - Need location suggestions

I want to gift my boyfriend a discovery flight experience. I want this to be memorable experience with awesome views when he gets up in the sky. I am thinking Las Vegas, Arizona grand canyons. We are planning a trip(destination tbd) in coming months and I want to push this as a surprise. what locations would you guys suggest? any preferred school
