Has anyone else found elimination diets made them more sensitive to foods over time?

I’m starting to feel a bit stuck with this and wanted to see if anyone else has experienced something similar.

I originally did an elimination diet to try and figure out what was causing my gut issues, mainly bloating and discomfort. I cut out things like dairy, gluten, and a few other common triggers.

At first it felt like it helped a bit, but over time I’ve noticed I seem to react to more foods than I did before.

Foods I used to eat without thinking now sometimes cause symptoms, and it’s making me feel like my “safe foods” list is just getting smaller and smaller.

It’s honestly getting a bit stressful because I feel like I’m overthinking everything I eat now.

I can’t tell if I’ve actually become more sensitive, if I’m just noticing symptoms more, or if I’ve somehow made things worse by restricting too much.

Has anyone else gone through this?

Did elimination diets help or backfire for you? How did you get out of that cycle?

Would really appreciate hearing other people’s experiences.
