How do drinks at the club level lounge work?

Resorts & Accommodations

On a recent trip we stayed for one night at club level at Yacht Club (rest of trip was in a regular room - had to add an extra night later on the front end and that was the only room category left!) We did online check-in so didn't get an explanation of the lounge then, and tried to read about it online.

Breakfast: we went in, grabbed out food, sat down. I saw someone with a mimosa and asked how to get it - "ask a staff member." So I tracked down a staff member who was refilling breakfast food and asked, who brought them to our table. During our 30 minutes eating breakfast no one came by again so we just had the one mimosa and left.

Evening: we stopped by at a time that was between dinner and the evening snacks. There was only one other couple in there with wine, but no staff to be seen. Eventually, I got up and tracked someone down again who was restocking coffee stuff - they brought us wine, but again, never came by. At one point the other couple yelled across the dining hall "Katie, could we have another chardonnay?" but there was no wait service persay.

So my question is.. how do you actually get these alcoholic drinks? Do you really need to get up and find/chase someone down to get them? Or are they supposed to stop by at the tables? And how do you know what is available? When we asked in the evening they said "we have some wines.. and some other things" so we just ordered wine since we weren't even sure what to ask about. Curious in case we ever stay again since I'd like to take advantage of the drinks but didn't feel like we were able to this first time since we didn't understand the process, and didn't want to be annoying.
