Titre : How do you actually find non-touristy experiences? Serious question

I feel like every hidden gem gets posted on Instagram and stops being hidden within about six months.

The best stuff I've found was always by accident, not by following a list. A wrong turn. A random conversation. Accepting an invitation without fully understanding what it was.

I've noticed that traveling by bike changes this a lot because you move slowly enough that things can actually happen to you. But curious what works for other people who don't cycle.
