I fed this starter 1:5:5 (10g starter, 50g flour, 50g water) around 5:00 in the evening yesterday and just looked this morning and this is where it’s at. The blue line was where it started yesterday. I want to feed this again, but not sure if it’s peaked already. The top is not domed and as you can see some nice bubbles throughout. But I want to feed it at least one more time before baking since it’s been in the fridge the past two weeks.

My question is- how do I know when to feed my starter again the next day? I just don’t know if it’s still peaking or has already peaked and I don’t wanna mess that up by feeding it again too soon. Should I just stick with a 24 hour schedule and feed it again around 5 PM? Also, what measurements do I feed my sourdough starter after the first initial feed? Would it still be 50 g of water and 50 g of flour even though it’s more starter now than what I originally started with? I don’t want to discard or put any starter in a new jar right now. I want to continue with this current jar but not sure what the measurement should be since it’s more starter than the original 10 g. Hope that all makes sense. I’m a beginner as you can see lol. TIA!!

Has this peaked? And when and how much do I feed it next?
