Sometimes the baked goods are masterfully made. Did the bakers train at a high level to master the craft?

I find each Coles and sometimes different days when some of the baked goods are amazing. Stuff that you would get from a gourmet bakery. Other times pretty mediocre or undercooked etc.

Where do they get the bakers from? In the larger cities you can get lucky with amazing stuff like a perfectly made Vegemite scroll etc.
