How do you handle payroll and compliance for a remote team across 4 countries?

We're a fully remote company with people in the US, UK, Poland, and Mexico. Paying contractors through Wise was fine at first, but we're growing and finance wants proper reporting and compliance.

Some of our contractors have been with us for years and really should be employees at this point. We don't have the resources to set up legal entities in every country, so an EOR seems like the obvious answer.

I've looked at a few options including Deel and Rise Works. For anyone who's done this transition, what software did you land on? What surprised you about the process?
