Want to learn N8N, need help!

I am not a technical person, do not know to code. However, I have jumped into technical functional work in the past. That mentioned, I am not highly technical I can manager surface level technical stuff.

I need some good resources where I can learn how to create workflows for my role as Client Account Management role, most of the content I have seen online I see people modifying already existing wokflows, nobody seems to explain how to create something from scratch and this driving me up the wall.

I had recently start learning the basics of N8N from the official N8N channel itself, but still some aspect I need clarification on based on my use case (I need help!)

Could somebody please provide me the best available resources to learn how to create simple to really advanced level N8N workflow without taking help of AI agent or AI platforms like Claude, cGPT or Perplexity. ( I would greatly appreciate the help.) Thanks much in advance!
