I tracked everything for 21 days because I was tired of not knowing why I felt like garbage (here's what actually changed)
Three years of feeling like I was barely living.
Bloated after almost every meal. Exhausted no matter how much I slept. Brain fog so bad I'd lose my train of thought mid-sentence. Skin breaking out for no obvious reason. Saying no to plans because I genuinely didn't know if I'd be functional that day.
And the worst part wasn't even the symptoms.
It was the unpredictability. Never knowing if today was going to be a good day or a bad day. Making plans and dreading them. Sitting in meetings trying to hold it together. Watching everyone around you just exist normally while you're quietly managing a body that feels like it's working against you.
Doctors said everything looked fine. People said drink more water. The internet gave me seventeen conflicting answers and a $200 supplement stack.
So I stopped trying to find the one thing and started actually paying attention.
I tracked what I ate and how I felt for 21 days. Energy, digestion, sleep, skin, mood. One change at a time so I could actually see what was doing what.
Here's what genuinely moved the needle:
Alcohol was the biggest thing I underestimated. Even one or two drinks set my digestion back by two full days. Removed it for the 21 days and noticed a difference by day four.
Variety of plants mattered more than eating "clean." The days I ate five or six different plant foods were consistently my best energy days. Not the days I ate the least. The days I ate the most different things.
Fermented food took about a week to notice anything. Small amounts consistently worked better than larger amounts occasionally. Two tablespoons of sauerkraut with a meal. Plain yogurt instead of flavored. Nothing dramatic.
Sleep timing beat sleep length. Same bedtime every night made more of a difference than trying to sleep longer. Not eating within two hours of bed changed my mornings noticeably.
Stress was doing more damage than I realized. There's actual research showing cortisol changes which gut bacteria thrive. The gut issues weren't just from what I was eating. They were from how I was living.
By day 21 the bloating was down. Energy was more stable. Skin was clearer. I was actually committing to plans again without that low-level dread of not knowing how I'd feel.
I ended up writing the whole thing up into a proper day-by-day breakdown because people kept asking me about it. Happy to talk through any of it in the comments if something resonated.
