Help! I can't decide which way to go from Rome (Late Aug- Early Sept)

Dropping my kid off at college in Trastevere on Aug 24th and will have about 10 days to do some solo traveling before I land back in Rome. I'll be in the country until Sept 8th.

Looking specifically for unique towns that are off the beaten path. Any places you've absolutely been floored by that were way under your radar is what I am in search of.

Love old cities with great history, scenic views, amazing food, and unique villages not already overblown with tourism, and I have never visited the Puglia, Umbria or Lombardy regions.

A loop that lands me back in Rome by September 5th is ideal. Thanks!
